Chocolate, Banana and Almond Lollies

A silly little post this one really, but quite fun and sometimes kitchen creations should be just that!

Chocolate, banana and nuts are such a good match. When I was younger, bananas were wrapped in foil, stuffed with squares of chocolate and baked on the barbecue until hot and oozy – heaven!

These little lollies are a slightly (only just) more elegant version of the flavour combination, requiring just 3 ingredients. If you can’t get hold of lolly sticks, you can use wooden plant markers.

I think these should either be served alongside a bowl of ice-cream (homemade if you wish to elevate the culinary standard somewhat), or with coffee at the end of a meal in place of chocolates.

The trick is to not rest them on a plate when them are drying or the chocolate will stick and the end result will look considerably less appealing. I’ve found the best thing to do is slice the end off an orange so it stands securely and then create a few deep, vertical slashes in the top to hold the lolly sticks upright. Perhaps if you used orange zest in your chocolate, this could also be a good way to serve them! If you find a better way than my orange, I’d love to know!

Chocolate, Banana and Almond Lollies (makes 6)

150g chocolate (I used dark, 70% cocoa solids), 50g toasted, flaked almonds, 2 bananas

6 lolly sticks, 2 oranges (1cm sliced off one end, so the orange stands without rolling and 3 vertical incisions made at the top to insert the sticks into)

Break the chocolate into pieces and place in a bowl over a pan of simmering water (don’t let the bowl touch the water). Whilst melting, crush the almonds into small pieces and slice each banana into 3 evenly sized chunks. Insert a lolly stick into the end of each banana chunk. Take one banana chunk and cover with melted chocolate*. Remove as much excess chocolate as possible and use a spoon to sprinkle over the crushed, flaked almonds. When you have suitable coverage, insert the stick into one of the incisions in the orange and repeat with the remaining banana chunks. Leave in the fridge to cool and harden before serving.

*for a thicker covering you can chill at this stage and them recover in another layer of chocolate before adding the nuts.
